How to make Belgian Waffles from scratch

Waffle Sunday Tradition

Every year, we host our neighborhood 4th of July breakfast and we make our favorite Belgian Waffles for about 150 people. The waffles are always a huge hit. Josh makes these easy Belgian waffles almost every Sunday for our boys, so he has had plenty of practice. It is easy for him to make them for our family or the entire neighborhood.

Waffle Sunday is a weekly tradition at our house. We love this Belgian waffle recipe because it is easy to make and the waffles turn out perfect every time, even when you are making them for a big crowd. This is the best waffle recipe!

What is the difference between a Belgian Waffle and a regular Waffle?

You can't beat a good Belgian waffle and these waffles are the very best. Josh has been making this waffle recipe since we got married. Waffles are Josh's specialty. He doesn't like me to help because he is the waffle master. I am fine with that, I get to stay in bed while he makes me breakfast! WIN!

To make Belgian waffles, you do need a Belgian waffle maker, with a deeper, larger grid pattern. You want the waffles to be nice and thick. We like this Belgian waffle maker. Belgian waffles are crispy on the outside and soft and tender in the inside. We love the deep squares because they can hold lots of syrup and toppings:)

Regular waffles are thinner and tend to be more fluffy and not crisp on the outside. We prefer Belgian waffles, because they are fluffy AND crisp. The best of both worlds. Belgian waffles are the king of all waffles:)

How to make Belgium Waffles

How to make Belgian Waffles from Scratch:

  • Josh uses a mix of all-purpose and whole wheat flour to create a hearty waffle that is still light and fluffy.
  • Buttermilk is a must. Buttermilk creates a thick batter which is important so the inside of the waffles stay soft and the outside can become crisp.
  • Brown sugar also helps the waffles get nice and crispy and adds a slight sweet, caramel flavor.
  • Make sure the buttermilk, melted butter, and eggs are at room temperature before mixing together. You don't want the the butter to clump up.
  • Don't overmix the batter. If you do, you will end up with a tough waffle.
  • Make sure your waffle iron is hot before adding the batter. We highly recommend this waffle iron. It makes perfect Belgian waffles every time.

Tips on How to Serve Belgian Waffles

  • Serve hot Belgian waffles with whipped cream, berries, and pure maple syrup. Sometimes we like to add our special brown butter buttermilk syrup. It is such a treat!
  • Keep the waffles warm by putting them on a baking sheet in 200 degrees Fahrenheit oven until ready to serve.
  • If you want to make the waffles the day before, let them cool completely and store them in an airtight container or Ziploc bag. Put them on a baking sheet in a 200 degree Fahrenheit oven to warm them up and crisp them up.
  • These waffles also freeze beautifully. We always have a stash in our freezer so our boys can easily enjoy them during the week. To reheat, pop them in the toaster. The toaster will heat the waffle and keep it nice and crisp.

Instructions

  • Preheat waffle iron according to manufacturer's directions.
  • In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and brown sugar. If you have any brown sugar clumps, use your clean hands to unclump the sugar and whisk again.
  • In a medium bowl, beat together eggs and melted butter. Stir in the buttermilk and vanilla extract.
  • Add the wet ingredients to the dry ingredients and stir until just combined. Don't overmix.
  • Spray the waffle with nonstick cooking spray. Pour the recommended amount of waffle batter onto the hot waffle iron. Close the waffle iron and cook until the waffle is golden on both sides and is easily removed from iron. Serve immediately or keep warm in a 200 degree F oven until ready to serve.
