Today we are sharing another meatless recipe from Better Homes and Gardens. Salads are a staple in our home. I could eat a salad every day for dinner or lunch. In fact, I often do. Salad is a chance to let your inner child loose and explore new ingredients. The sky is the limit with greens and toppings. This Cabbage and Carrot Salad with Peanut Sauce is loaded with some really great flavor combinations.
I made two simple changes to BHG's recipe. I used vegetable broth instead of chicken broth for the peanut sauce. I also added bell peppers to the salad. I always try to sneak more veggies into my salads!
Substituting the chicken broth for the veggie makes this a great vegetarian option. The dressing perfectly coasts the fresh veggies and will leaving you savoring every last crunchy bite.
Adding the bell peppers was an easy addition to the salad. Just a thin slice of the pepper and a toss with the other ingredients and you have instantly added more flavor, color and crunch!
This salad is packed full of flavor with great colors and texture, and the peanut sauce sends it right over the edge! The best part is that it takes no time to make at all. 7 minutes of prep and you can start enjoying every bite! Easy to make, beautiful, and delicious; sounds like a win win to me!
