Green beans almondine (amandine) is a classic French dish. It may sound fancy, but it is basically green beans with a garnish of almonds. Sometimes simple recipes are the best and that is definitely true with this recipe.

The bright green beans are sautéd with shallot and garlic for flavor and topped with toasted sliced almonds. The almonds are crunchy, buttery, salty, and make the green beans extra special. I also like to add a squeeze of fresh lemon juice to brighten up the dish.

You only need a few ingredients to make this elegant green beans almondine recipe. It is the perfect side dish to any meal! We like to serve it at Thanksgiving, Christmas, and Easter, but it is also perfect with any weeknight meal because it is so simple. It is always a crowd pleaser.

Ingredients

  • Fresh green beans– wash and trim the ends of the green beans before using.
  • Butter– for sautéing the almonds. If you need the recipe to be vegan or dairy free, you can toast the almonds in a dry pan and cook the shallot and garlic in olive oil.
  • Almonds– use sliced almonds.
  • Shallot– look for shallot in the produce section by the garlic.
  • Garlic– minced.
  • Lemon– a squeeze of fresh lemon juice brightens up the dish.
  • Kosher salt and black pepper– for seasoning.

How to Make Green Beans Almondine

  • Bring a large pot of salted water to a boil. Carefully add the green beans and blanch for 2 to 3 minutes, or until they are slightly tender but still crisp. You are going to finish cooking them in a skillet, so make sure you don't blanch them for too long.
  • Drain and plunge the green beans into a large bowl of ice water to stop the cooking process, this will also help the green beans keep their vibrant green color. Drain, and transfer to a clean towel to dry.

  • In a large skillet, melt butter over medium heat. Add the almonds and sauté until golden brown, about 2 minutes, stirring occasionally. Watch them closely so you don't burn the almonds.

  • Add the green beans to the pan and sauté over medium heat for 2 to 4 minutes, until the green beans are tender.
  • Remove the pan from the heat and finish with a squeeze of lemon juice. Stir in the almonds and season with salt and pepper. Serve warm.

How to Store

If you have leftovers, let the green beans cool completely. Transfer to an airtight container and store the beans in the refrigerator for up to 4 days. Reheat in the microwave or in a skillet on the stovetop.
