Melon Salad with Mint, Lime, and Sea Salt

Last weekend we went to the farmers market and stumbled upon Israeli melon. They were giving away samples and I was intrigued. After one taste, I was hooked. We bought a melon and came home and enjoyed it for lunch. We served our melon salad with mint, lime and sea salt. It may sound weird, but let me tell you, this combination is divine.
I wasn't planning on blogging about this melon salad, but I can't get it out of my head. I am obsessed! It is SO good. The juicy melon is good alone, but after dressing it up with fresh mint, lime juice, and a pinch of sea salt-it is heavenly. There really aren't words to describe it's deliciousness. It is pure summer bliss in a matter of minutes.
We used Israeli melon, but cantaloupe would be tasty as well. This melon salad with mint, lime, and sea salt is good anytime of the day too-breakfast, lunch, dinner, or a snack. I could eat it all day long. I am in love!
Melon Salad with Mint, Lime, and Sea Salt
Ingredients
- 1 Israeli melon sliced, rind removed (or use cantaloupe)
- Fresh mint chopped
- 1 lime cut into wedges
- Pinch of sea salt
Instructions
- 1. Place melon slices on a large platter. Sprinkle melon slices with fresh mint.
- 2. Squeeze fresh lime juice over the melon slices. Sprinkle each slice gently with sea salt.
- 3. Enjoy!
- *Note-chill the melon before cutting/serving, if possible. If you can't find Israeli melon, use cantaloupe.
