Life is beyond busy for us right now and by the time dinner rolls around I am exhausted. On most days, the last thing I want to do is cook dinner. Even though I love to cook, sometimes it is just one more thing to do! I always entertain the idea of getting takeout, going out to dinner, or even eating a bowl of cereal. Even on the busiest of days, I almost always find myself in the kitchen making dinner. When it comes down to it, I remember that I love to cook and more importantly, I want to feed my family good food. Heck, I want to eat good food, especially when I am tired. After a long day I deserve a good meal. We all do!

So I have been focusing on making quick and easy meals for my family. I can find the energy to make a 30 minute meal after a long day if it means I get to eat a delicious dinner with my loved ones. It is always so worth the effort!

I am currently loving flatbread pizzas for dinner. My favorite is this Meyer Lemon, Kale, and Goat Cheese Flatbread. It takes less than 30 minutes to make, but you will never guess it because it tastes like a gourmet pizza that was made in Italy!

The secret to making a quick and delicious flatbread pizza is store bought flatbread. Stonefire is our favorite! We always have Stonefire in our fridge or freezer. It has saved dinner numerous times.

For this recipe, I used Stonefire's Whole Grain Tandoor Baked Naan Flatbread. It makes the perfect whole wheat pizza crust and all you have to do is the open the package!

I love this flatbread because the ingredients are simple, but so flavorful! I used kale, Meyer lemons, and goat cheese. The combo is amazing! Meyer lemons are sweeter and not as tart as regular lemons. They give the flatbread the perfect burst of citrus and I love the creamy goat cheese and crispy kale! I like to add a sprinkle of crushed red pepper flakes for a bit of heat, but you can leave it off if you don't like spice. I always leave Caleb's section plain.

This simple flatbread is great for those nights when you aren't in the mood to cook, but still want and crave a delicious dinner. It would also be good for lunch or as a party appetizer! It really is good anytime of the day, even for breakfast. It is rare for us to have leftovers, but if we do, I have been known to eat a slice as soon as I wake up! I love this Meyer Lemon, Kale, and Goat Cheese Flatbread and hope you do too! I promise it is worth 30 minutes of your day!

Meyer Lemon, Kale, and Goat Cheese Flatbread

This simple flatbread recipe takes less than 30 minutes to make. The flavors are fresh and oh so delicious! Serve for lunch, dinner, or as a party appetizer!

Ingredients
  

  • 2 teaspoons olive oil
  • 1 clove garlic minced
  • 2 packed cups chopped kale ribs removed (I used Dino/Tuscan kale)
  • 1 teaspoon fresh Meyer lemon juice
  • Salt and black pepper to taste
  • 2 Stonefire Whole Grain Tandoor Baked Naan Flatbreads
  • Olive oil for brushing breads
  • 4 ounces goat cheese
  • 1-2 Meyer lemons thinly sliced
  • Crushed red pepper if desired

Instructions
 

  • Preheat the oven to 400 degrees F.
  • In a medium skillet, heat 2 teaspoons olive oil. Add the garlic and cook for 2 minutes. Add the chopped kale and fresh lemon juice. Season with salt and black pepper and cook until kale is tender and wilted, about 3-4 minutes. Remove from heat.
  • Place the Naan flatbreads on a large baking sheet. Brush each flatbread with a little bit of olive oil. Sprinkle chunks of goat cheese evenly over the breads. Top with cooked kale and lemon slices. You will want 3-4 lemon slices for each flatbread. Sprinkle crushed red pepper over the flatbreads, if using.
  • Place baking sheet in preheated oven and cook for 12-14 minutes, or until cheese is melted. Remove from oven and cut into pieces. Serve warm.
  • Note-I like to eat the lemon, but you can always remove it. It will still add great flavor!
