Raspberry Coconut Smoothie-this easy smoothie recipe only has five ingredients and will transport you to a tropical island!
Being pregnant during the summer is not fun. Ok, being pregnant is never “fun,” but it is worth it. It's a good thing a cute little baby is my prize at the end of all of this:) I was pregnant with Caleb during the summer, so I knew what was coming, but this time around it seems more miserable. It is hot outside and I am constantly looking for ways to cool down.
My new favorite cool down treat is this Raspberry Coconut Smoothie. I want to drink it all day, every day!
You only need five ingredients and five minutes to make this smoothie recipe. So there should be no excuses, you all need to make this smoothie today!
I use Almond Breeze Unsweetened Almondmilk Coconutmilk in this smoothie. Have you tried it? It is my current obsession! I can't get enough. Almonds are blended with real coconut to produce a rich, creamy non-dairy beverage that is delish. It is all natural, dairy, soy, lactose, cholesterol and gluten free. It is great plain, but it is amazing in my smoothie! It gives this smoothie the perfect coconut flavor.
In your blender, combine Almond Breeze Unsweetened Almondmilk Coconutmilk, raspberries, banana, and spinach. Blend until smooth, pour in a glass, and top with shredded coconut. Boom! That is it! Sip away and pretend you are vacationing on a tropical island!
If you want a brighter color smoothie, you can leave out the spinach, but I love adding greens to my smoothies. I promise you can't taste the spinach and I like the purple color!
Cool off this summer with a Raspberry Coconut Smoothie. This smoothie is great for breakfast, snack time, or even dessert. I know I will be sipping on this smoothie until I have this baby. Only eight hot weeks to go:)
Raspberry Coconut Smoothie
Ingredients
- 1 cup Almond Breeze Unsweetened Almondmilk Coconutmilk
- 1 cup raspberries fresh or frozen
- 1/2 medium banana
- 1/2 cup spinach
- 2 tablespoons coconut for garnish
Instructions
- Place the milk, raspberries, banana, and spinach in the blender and blend until smooth. Pour into a glass and garnish with coconut. Serve immediately.
- Note-if I use fresh raspberries I like to throw in a few ice cubes to get a thicker/colder smoothie.
