Roasted Sweet Potato, Apple, and Spinach Salad
Updated March 26, 2019
This week has been a long one! I was out of town for work and traveling wears me out. Plus, I missed Josh, my bed, and kitchen. I am happy to be home! My dad is visiting from Illinois this weekend. I am excited for some fun family time!
My brain is still pretty fried from the trip, so I don't have a lot to say today, but try this salad-you will love it! The roasted sweet potatoes really make this salad. I like the sweetness and crunch of the apple slices too. I add a little red onion and feta cheese for extra flavor. I use fresh spinach, but a spring mix would be good too! Dress the salad with a balsamic dressing of your choice! Enjoy!
Oh, and some good news-I have a new gig! I am a recipe contributor for the website-Make and Takes. I posted my first recipe this week: Simple and Healthy Veggie Tostadas. I will be sharing a recipe once a month, so visit often. Make and Takes also has great craft and family fun ideas-so check it out!
