Rosemary Roasted Almonds

We hope everyone had a very Merry Christmas. Santa brought our gift early this year, our new kitchen so we spent most of the day watching movies in our pj's. It was nice to relax. We did cook up a nice dinner and were able to talk to our friend's and family. It was a great day. If you are all sugared out from eating too many Christmas cookies, I have a healthy recipe for you to enjoy today-rosemary roasted almonds.

Pin ItI love snacking on nuts, they are delicious and nutritious. Nuts are a great source of protein, contain heart healthy fats, and they are easy to eat on the go. I like eating plain nuts, but roasted nuts are even better. Candied Pecans are my favorite, but these rosemary roasted almonds are a close second. Whole almonds are seasoned with fresh rosemary, a dash of chili powder, salt and then placed in the oven to roast.
Our house smelled amazing while the almonds were roasting away. I sampled a few nuts as soon as I removed them from the oven and was very pleased with the results. The rosemary compliments the almonds nicely. These rosemary roasted almonds make a terrific game day snack or party appetizer. I am going to put a bowl of rosemary roasted almonds out for our New Year's party. I know our guests will enjoy munching on them.
Rosemary Roasted Almonds
Ingredients
- 2 cups whole almonds
- 1 tablespoon olive oil
- 1 tablespoon finely chopped fresh rosemary
- 1/2 teaspoon chili powder
- 3/4 teaspoon kosher salt
- Dash of ground red pepper
Instructions
- Preheat oven to 325°. Line a large baking sheet with a silicone baking mat or foil. Set aside.
- Combine all ingredients in a medium bowl and stir until almonds are evenly coated. Arrange nut mixture in a single layer on prepared baking sheet. Bake for 20 minutes or until lightly toasted. Cool to room temperature.
