I love making salads, especially during the spring and summer months when the weather is nice and lots of produce is in season.

This Strawberry Burrata Salad is a favorite when strawberries are ripe and in season. It is simple to make and GORGEOUS to serve! Every time I make this salad for family and friends they love it and ask for the recipe.

Arugula is topped with juicy strawberries, crisp cucumbers, creamy burrata cheese, pickled red onions, candied pecans, fresh basil, and a drizzle of balsamic vinaigrette.

Serve the salad with crusty bread or grilled bread or you could even add homemade croutons to the salad.

This beautiful salad is almost too pretty to eat:) And if you've never had burrata cheese, you are in for a real treat. It is incredible!

Ingredients

  • Arugula– I love using baby arugula. It is fresh, peppery, and slightly spicy.
  • Strawberries– look for ripe, juicy, bright red berries!
  • Cucumbers– I love using Persian cucumbers, but English cucumbers will work too.
  • Burrata cheese– Burrata cheese is mozzarella that's formed into a thin pouch and then filled with a mixture of soft, stringy curd and cream called stracciatella. It comes in a tub with liquid and can be found at most grocery stores by the cheese counter.
  • Candied Pecans– they add a sweet, sugary crunch to the salad! My recipe is easy to make and they will make your house smell amazing. You can make them in advance. Store them in a glass jar or container for a few week or freeze them for a few months.
  • Basil- fresh basil leaves add so much flavor!
  • Pickled Red Onions– optional, but SO good! I always keep a jar of pickled red onions in my fridge.
  • Balsamic Vinaigrette– for drizzling over the salad.

How to Make Strawberry Burrata Salad

  • Arrange arugula on a large serving platter. Top with strawberries and cucumbers.
  • Break apart the burrata cheese and arrange it on top of the salad. Season with salt and pepper.

Variations

  • Greens– use your favorite greens! Spring mix, kale, romaine, or spinach are all a delicious base for this salad.
  • Fruit– if strawberries aren't in season, you can use any fruit. Peaches, blackberries, raspberries, or pears are all good options.
  • Nuts– instead of candied pecans, use regular pecans, almonds, pistachios, or walnuts.
  • Protein– add chicken, shrimp, salmon, or steak to the salad.
  • Croutons– add homemade croutons for a savory crunch!
  • Cheese- if you can't find burrata cheese, you can use fresh mozzarella.
  • Dressing– use basil vinaigrette instead of balsamic vinaigrette.
