I love energy balls (aka energy bites). I eat one every day after lunch for a healthy little sweet treat. A few of my favorites include: monster cookie, chocolate peanut butter, pumpkin, and almond joy.

They only take 10 minutes to make and you can keep them in the fridge for up to 2 weeks. They are the perfect grab and go snack or you can even eat them for breakfast or dessert. Kids and adults love them!
Get Out Your Ingredients
- Almond butter– use a creamy almond butter that is drippy and not dry. Always stir well before using.
- Honey– to sweeten the energy bites. You can use pure maple syrup if you need the recipe to be vegan.
- Vanilla extract– love the hint of vanilla.
- Almond extract– optional, but SO good. Make sure you only add a little bit because almond extract is strong.
- Oats– use old fashioned oats or gluten-free oats if you need the recipe to be gluten-free.
- Vanilla protein powder– for a protein boost. Use your favorite brand, I like Clean Simple Eats vanilla. Use the code TWOPEAS for a discount. If you don't want to use protein powder, you can use flaxseed meal or add more oats.
- Sea salt– my favorite!
- Freeze-dried raspberries– I always find them at Target. You can get them online too. If you can't find freeze-dried raspberries, strawberries work well too.
- White chocolate chips– white chocolate chips are pretty sweet, so I just add a few tablespoons. If you don't care for white chocolate, you can use dark, semi-sweet, or milk chocolate chips.
How to Make
- In a medium bowl, combine the almond butter, honey, vanilla extract, and almond extract, if using. Stir with a spatula until smooth.
- Add the oats, protein powder, and sea salt; stir until well combined. Stir in the freeze-dried raspberries and white chocolate chips.
- Roll the mixture into balls, about 1 tablespoon per ball. You can also use a cookie scoop to form the balls.
- Place in an airtight container and keep refrigerated for up to 2 weeks.
How to Store
You need to store the energy balls in the refrigerator. They will keep in an airtight container for up to 2 weeks.
You can also freeze the energy balls for up to 2 months. Make sure they are in an airtight container or freezer bag.
